Featured: ~~ Potato Soup ~~
Cooking 3 tbsp butter or margarine (50 ml)
1 large onion, sliced
½ cup thinly sliced carrot (125 ml)
½ cup diced celery (125 ml)
3 garlic cloves, minced
4 cups diced potato (1 L)
2 cups chicken stock (500 ml)
1 ½ tsp salt (7 ml)
¼ tsp pepper (1 ml)
1 tsp parsley flakes (5 ml)
2 cups milk (500 ml)

Melt butter. Saute onion, carrot, celery & cloves until onion is soft & clear.

Add potato, chicken stock, salt, pepper & parsley. Bring to a boil. Cover and simmer until potato is cooked. Stir occasionally.

Add milk & heat slowly - do not boil.

Garnish with grated cheese if you like.

Makes 5 cups.

OPTIONAL: I like to add ½ tsp of McCormick Table Shake (if you can buy it). It's a salt free seasoning mix.
